Crunchy Fried Shrimp With Spicy Aioli
1-1/2 cups of mayo
1-1/2 tsp fresh lemon juice
2 garlic cloves, minced
1 tsp cayenne pepper
1/2 tsp dijon mustard
1/2 cup yellow cornmeal
1/2 tsp salt
1/2 tsp cayenne
1-1/2 lbs of shrimp, peeled and deveined
Whisk mayo, lemon juice, garlic, cayenne and mustard in a bowl. This is best made one day in advance.
Heat oil to 375 degrees. Mix cornmeal, salt and 1/2 tsp cayenne in a bowl. Toss to coat well. Working in batches, fry shrimp for about 1-1/2 minutes. Drain and serve with aioli.
