Spinach Balls

Two (2) 10-ounce packages frozen, chopped, spinach (thawed and drained, squeeze out liquid)
2 cups herb stuffing mix
1 cup grated Cheddar cheese
1/2 cup butter (room temperature)
1 small onion, finely chopped
3 eggs, beaten
Dash nutmeg
For the Mustard Sauce
1/2 cup dry mustard
1/2 cup white vinegar
1/4 cup sugar
1 egg yolk

Sauce: Combine mustard and vinegar in a small sauce pan and allow to set at room temperature for 4 hours. Stir in sugar and egg yolk. Cook over low to medium heat until thick. Cool. Refrigerate until ready to serve.

Spinach Balls: Heat oven to 350 for 10 minutes.

Mix all of the first 7 ingredients until well combined. Form into small balls and place on a greased (or parchment-lined) cookie sheet.

Bake at 350 for 10 - 12 minutes.
