Gram's Haddock and Zucchini Casserole
Haddock
nice pieces of haddock - amount up to you
Italian seasoned breadcrumbs
butter
lemon pepper
milk
Butter casserole dish and place haddock pieces in. Cover bottom of dish with milk. Sprinkle with lemon pepper and top with breadcrumbs. Dot with butter.
Bake in 350 degree oven for 15-20 minute until flaky.
Serve with 1 box of rice pilaf, cooked according to package directions.
Casserole
1 can zucchini in tomato sauce
1 slice of white bread
Place zucchini in casserole dish and top with bread broken into pieces. Bake till bread is lightly toasted.
English Triffle
2 pkgs of lady fingers
1 pkg instant vanilla pudding
1 large can of peach halves, drained
1/2 small jar of raspberry jam
2 cups whipping cream
3 tbsps brandy
1/2 cup slivered almonds - optional
Line side and bottom of triffle dish (or any clear glass bowl) with ladyfingers. Sprinkle with brandy. Beat cream and pudding till thick. Fill peaches with pudding mixture and arrange over ladyfingers in bowl. Drizzle jam on top, then place remaining pudding on top. Sprinkle with almonds if desired. Chill about 20-30 minutes to set
