Basil Pesto
A simple and delicious recipe using the wonder herb.
2 Cups fresh, cleaned, basil
¼ Cup pine nuts
¼ Cup grated Parmesan cheese
1 or 2 Cloves of garlic
2 Tablespoons to ¼ cup extra virgin olive oil
Remove basil from steams and rinse under cold water. Dry with paper towels. Place basil in the bowl of a food processor. Add remaining ingredients, except the olive oil, and process with a few on/off turns. With processor running, slowly add the 2 tablespoons of olive oil. If the pesto does not puree or seem smooth, drizzle more oil into processor while it is running. Turn pesto into a bowl and add salt and pepper to taste.
