Coeur a la Cream
Wonderful flavor with an interesting way of preparing the cake. Sauces that can be used in a variety of ways.
Cream
10 oz cream cheese - softened
1/2 cup confectioners sugar
2 tsp pure vanilla
1 cups heavy cream
Beat cream cheese in mixer until light and fluffly. Mix in sugar and vanilla and blend well.
Set aside.
In another bowl, beat the heavy cream until stiff peaks form.
Fold cream carefully into cream cheese mixture
Pour into wet cheesecloth line mold and cover with cheese cloth and plastic wrap. Place on a rack over a pan and refrigerate overnight.
Strawberry Sauce
2 tbsps honey
2 tbsps orange juice
3 tbsps brandy
2 cup fresh strawberries, hulled and cut into chunks
1 tsp cornstarch
Cook honey, orange juice and brandy until it comes to a simmer. Add strawberries and simmer over low heat for about 10 minutes. Remove from heat and blend in cornstarch.
Put into a bowl, cover and chill.
